Description:
Sorbitan tristearate (E 492).
Scope of application:
Cooking oil (frying fat), cooking fats, masticating pastes, condensed milk,
chocolate, margarine, glazes, confectionery.
Advantage:
• acts as an anti-crystallizer in fats, margarines, condensed milk;
• prevents the appearance of fatty gray on the surface of chocolate and chocolate
glazes.
Dosage:
- cooking oil (frying oil) 0.05-0.15 %;
- confectionery fats 1.0-3.0 %;
- spray pastes and margarine 0,3-0,5 %;
- condensed milk, chocolate, glazes 0,3-1,0 %.
Technological recommendations:
It is introduced into the kneading machine or into the working emulsion together with the fat, depending on the technological process.
